Thai Beef Curry

I love this recipe. The recipe I used previously, was vegetarian. I've made my own adjustments to suit our preferences and we really enjoy this comforting food.
It makes a nice big batch, so I always freeze half of it for when I need a quick meal.
Ingredients
- (2 cans) Coconut Milk
- (1 can) Diced tomatoes, with the juices
- (2 lbs) Ground beef, cooked
- (1 head) Cauliflower, chopped up into bite sized pieces
- (3-4 tbsp) Red Curry Paste (depending on how spicy you like it)
- (1/2 tsp) Onion Powder
- (1/2 tsp) Garlic Powder
- (3/4 tsp) Sea Salt, or to taste
- (1/4 tsp) Cayenne Pepper, optional
- Ground Pepper, to taste
- (1/2 cup) Red lentils, uncooked
- (1 whole bag/container) Spinach, optional - chopped
- (2 cups) Carrots, shredded
- (1 cup) Onion, diced
Directions
Cook ground beef on medium heat, add in onions and carrots once ground beef is partially cooked.
In a large pot, add coconut milk, tomatoes, lentils, cauliflower and spices together, then bring to a boil on medium. Let simmer for approximately 30 minutes, or until lentils are soft.
Once ground beef mixture is cooked, add to the pot.
Add spinach once lentils are cooked and stir in until wilted.
We love eating ours with Jasmine Rice, mixed all together and a spritz of lime juice over top for a little "zing".
